Remove The Wings Tips And Neck

Start preparing the duck by taking its neck out of the carcass.

Some chefs remove the neck and place it in a goodie bag along with liver and giblets that are later stuffed in the bird’s cavity.

This task is typically done with the help of a meat cleaver, but a Japanese Poultry or Chef’s knife will do the job as well. Please don’t slice off the entire neck; leave at least a couple of inches attached along with the vertebrae.

This bit will come in handy when you hang the carcass for dry-ageing.

Next, you will need to cut off the wing tips but cut the joint in the right wing.

As with chickens, there is no useful meat in the wing tips; however, they are good for stock.

While this is the step in removing the wishbone from the carcass, that will come later.

Cutting the wishbone off the carcass is easier when the duck has dry-aged in the refrigerator.

While in the fridge, the meat around the wishbone will get firmer and, during the ageing process, will dry out, making it easier for you to remove the wishbone without taking out the breast meat.

Remove Excess Fat And Skin

It is not a surprise that ducks have a higher fat content than chicken, and it is the fat that makes duck meat delicious.

However, you don’t want to chew on all the fat in a duck, especially when there are many ways to use the flavor in the kitchen.

Before you start carving up the duck, trim all the excess skin and fat from the cavity and neck region.

All the meat on the carcass is covered by skin, so don’t get aggressive when trimming the skin, and remember that the skin might shrink and seizes during the cooking process.

Ensure you have a preparation station so that you have containers or a sheet tray by the cutting board for reserving the excess skin, fat, scraps and bones.

These parts of the carcass will be used later on to make stock.

Remove The Legs From The Carcass

Trimming the excess fat and skin from the duck’s cavity enables you to butcher the duck’s carcass easily.

Have you ever broken down a chicken? If you have, then this process will be easy for you.

However, you need to work with one leg at a time.

Grab the duck through its drumsticks, and pull the leg away from the body, until its skin is stretched out.

With the help of a sharp knife, cut the skin between the duck legs and the body using smooth and light slicing motions.

You should cut through the duck’s skin and should not pierce the meat underneath the skin.

Then, flip the duck to the other side; the leg you were processing should be facing towards you.

With the help of your hands, grab the duck’s leg with one hand and ensure your fingers rest on the leg’s skin.

Then, use your thumb to expose the flesh, and holding the carcass against the cutting board, rotate your hand forward, pulling up with the thumb and pushing the carcass back with your fingers.

This will pop out the ball joint from its socket.

Then, take a knife, and remove the leg from the carcass.

Repeat this process with the other leg as well.

How Do You Cook Duck?

Here is how you can cook duck meat:

Roasted Duck


Butter (Melted and Divided): ½ Cup

Whole Duck: 1 (5 Pounds)

Black Pepper: 1 tsp.

Paprika: 2 tsps.

Salt: 2 tsps.


First, you will need to put the oven at 375 Degrees Fahrenheit.

Combine the salt, black pepper and paprika in a bowl.

Rub the mixture on the duck’s skin and place it on a roasting pan.

Roast the duck for 60 minutes in the oven.

Spoon the melted butter over the duck, and let the meat cook for an additional 45 minutes.

Spoon the remaining butter over the meat and cook the meat until it is golden brown, or for 15 additional minutes.
