If you add meat to the curry, add the browned meat to the simmering sauce, and decrease the heat.
Cover the skillet with a lid and let it cook for 10 minutes, or until the meat is tender and cooked.
Then, remove the curry from the stove, and add about ½ cup of heavy cream, full-fat Greek yogurt, or coconut milk to add more richness to the dish.

- Ground Cumin: 1 tsp.
- Fennel Seeds (Crushed): ½ tsp.

- Ground Cinnamon: ½ tsp.
- Ground Cloves: ¼ tsp.
- Ground Mustard: ¼ tsp.
- Yellow Onion (Small/Chopped): 1 Cup
- Olive Oil: 2 tbsp.
- Ginger (Peeled/Minced): 1
- Garlic Cloves (Minced): 1 ½ tsp.
- Low-Sodium Chicken Broth: 1 Cup
- Canned Diced Tomatoes: ¾ Cup
- Boneless and Skinless Chicken Breasts: 1 ½ Pound
- Chopped Cilantro: 2 tbsp.
- Heavy Cream: 1/3 Cup
In a small-sized mixing bowl, combine all the spices and set them aside.
In a 12-inch non-stick skillet, heat olive oil over medium high heat.
Add the onion to the skillet and sauté until they are golden brown; this process should take 4 to 6 minutes.
Add ginger and garlic to the skillet, and sauté for up to 30 seconds.
Then add the spice blend to the skillet, and sauté for an additional 30 seconds.
Pour in the tomatoes and chicken broth and bring them to a boil.
Then decrease the stove’s heat to medium low, cover the skillet with a lid and simmer the mix for about 5 minutes.
Pour the mix into a food processor or a blender, and cover with a lid.
Please remove the lid insert and cover the opening with a folded cloth or kitchen rag.
Blend the mix until it is smooth and pureed.
Then, return to the skillet and heat it over medium high heat.
Season the sauce with cayenne pepper and salt; start with a few dashes of cayenne pepper and ½ tsp. Salt and then add the chicken.
Bring the sauce to a simmer, then decrease the heat to medium.
Cover the skillet with a lid, and simmer the sauce until the chicken is thoroughly cooked.
Stir the chicken occasionally, after about 8 to 12 minutes.
During the last few minutes of the cooking, stir in water slurry and cornstarch if desired so that the sauce develops a thick texture.
