What Are Macarons?

A Macaron, also known as French Macaron, are colorful confections with a sweet meringue base.

The confection is made with food coloring, egg whites, almond meal, granulated sugar and icing sugar.

It is believed that Macarons were introduced in France by an Italian chef who worked for Queen Catherine De Medici during the Renaissance.

What Do Macarons Taste Like?

Typically, a balanced Macaron has a nutty flavor, and while sugar is an ingredient, it is not the highlight of the Macaron.

This means that the balance between nuttiness and sweetness determines the taste of Macarons.

There are many Macaron flavors, such as pistachios and jam, chocolate, caramel and fruit.

How Are Macarons Made?

Here is how you can make Macarons:

Equipment

  • Mesh Sieve
  • Stand Mixer or Electric Hand Mixer
  • Rubber Spatula
  • Disposable Piping Bags (16-inch)
  • Large and Round Piping Tip
  • Parchment Paper
  • Cooling Rack
  • Baking Sheet

Ingredients

  • Powdered Sugar: 2 Cups
  • Almond Flour: 1 Cup
  • Cream of Tartar: ¼ tsp.
  • Egg Whites: 3
  • Salt: A Pinch
  • Vanilla Extract: 1 tsp.
  • Granulated Sugar: ¼ Cup
  • Food Coloring
  • Macaron Filling: Of your Choice

Method

Preheat the oven to a temperature of 275 degrees Fahrenheit.

Line a pair of baking sheets with parchment paper, and fix a 16-inch decorating bag with a round decoration tip.

Sift the almond flour and powdered sugar together, and discard the large portions of the flour that won’t pass through the sieve.

In a large-sized bowl, beat salt, cream of tartar and egg whites on a high speed until they develop a foamy texture.

With the mixer on, slowly add small quantities of granulated sugar.

Ensure the egg whites have been separated 24 hours in advance.

Once the mixture is soft, add gel food coloring and vanilla.

Continue whipping the mixture until its forms stiff peaks.

Gradually and gently add the almond mixture over the whipped egg whites.

With the help of a rubber spatula, combine the wet ingredients and the dry ingredients into batches.

Gently mix the beaten egg whites and the almond mixture until the mixture is firm (Do a 10 count).

This method will ensure that the mixture remains hydrated and the egg whites retain air.

The mixture should be thick and consistent enough to pipe and thin enough to go through the pipe.

The batter should develop a honey-like texture, and it will take about 45 minutes to get to the texture, but it depends on how aggressively you fold the batter.

The next crucial step is to transfer the batter to a decorating bag and pour approximately one-inch thick batter on the parchment sheet-lined baking pans.

Release the air bubbles from the baking sheet by tapping it onto a flat surface 4 to 5 times, and let the unbaked Macarons rest for 20 to 30 minutes at room temperature or until the Macarons have a skin.

Bake the Macarons in the oven for up to 22 minutes; if the Macarons are under-baked, their center will be wet.

If the Macarons are overbaked, they develop a crunchy rather than crispy texture and start to brown.

Once baked, place the Macarons on a cooling rack before you fill the filling in them.

To fold the mixture into ribbons, transfer the Macaron mixture to a piping bag.

Ensure the piping bag has a round tip at the end.

Pipe the Macaron mixture onto a baking sheet lined with parchment paper, and ensure a space of 2 cm between the Macaron circles.

Tap the sheet on a flat surface, such as the countertop, at least 5 times to eliminate all the air bubbles.

Leave the Macarons at room temperature for about half an hour, and preheat the oven to 300 degrees Fahrenheit.

Bake the Macarons in the oven for about 17 minutes, and transfer them to a wired rack so that they can cool down.

In a large bowl, make the buttercream, pour the butter into the bowl and beat it for about a minute until it is fluffy and light.

Add the powdered sugar to the mixture, and beat it.
