Instant Pot Pork Tenderloin Recipe

Ingredients 

Here are the exact ingredient amounts to help you make the perfect meal for dinner parties.

For Cooking 

  • 1 ½ to 2 ½ pounds boneless pork loin roast (around 3 ½ inches thick and 5 to 7 inches long)
  • 3 tbsp. Olive oil
  • 1 ½ cups chicken broth

For Seasoning 

  • 1 tsp. Smoked paprika
  • 1 tsp. Kosher salt 
  • 1 tsp. Dried rosemary
  • 1 tsp. Dried thyme leaves
  • ½ tsp. Garlic powder
  • ½ tsp. Onion powder
  • ½ tsp. Ground cummin
  • ¼ tsp. Fresh ground black pepper
  • ¼ tsp. Ground coriander 

For Vegetables

  • 1 lbs. Baby potatoes or sweet potatoes (halved)
  • 1 lbs. Baby carrots
  • 4 cloves garlic, minced
  • 1 medium onion, (wedges) 

For Gravy

  • 3 tbsp. Cold water 
  • 3 tbsp. Cornstarch
  • Juice from half a lemon
  • Salt and pepper to taste

Cooking your Pork Recipe 

  1. Prepare your seasoning by mixing the seasoning ingredients above inside a small bowl and whisk everything together into a dry rub.
  2. Pat your pork dry using a paper towel and start seasoning your pork by rubbing your seasoning (alternatively, you can use Italian seasoning). Make sure that both sides are evenly coated; you can insert great flavor into each piece by rubbing as you go. 
  3. Heat up some olive oil inside your instant pot and put it on the “sauté” function to start cooking pork loin on both sides. When done, remove your pork and set aside. 
  4. Start to saute your vegetables by adding more olive oil to your pilot and cook your onion until it softens. Follow up with your garlic and cook it until fragrant, then transfer everything into a bowl.   
  5. Now it’s time to deglaze your pot by pouring the chicken broth into your pot, using a wooden spoon to scrape away at the browned bits at the bottom of the pot. 
  6. Cook your pork and vegetables in the instant pot by putting your pork back inside, and begin layering your vegetables around it. 
  7. Close the lid and secure it before cooking on high pressure. 
  8. After it finishes cooking for 45 minutes, check your pork’s internal temperature with an instant read thermometer. If you don’t see 145 degrees Fahrenheit, leave it in for a little longer, then remove your pork and vegetables from the pot and place it on a cutting board while the pork rests.
  9. Make your slurry by whisking your cornstarch and water inside a small mixing bowl. 
  10. Start making your gravy by setting your pot back on “sauté” mode and simmering the juices inside your pot. Stir in your slurry and start mixing. Simmer your blend until the gravy gets thicker, then add some salt and pepper to taste. 
  11. Now serve the dish with your carrots, potatoes, and onions, then generously drizzle your meal with the gravy. 

What to Do if Your Pork Loin is Undercooked? 

The cooking times used for this recipe are based on a 2-pound roast that you can get at your local grocery store, which is roughly around 3 ½ inches thick, and up to 7 inches long. If you find that your pork roast is undercooked, it may be thicker and will need more time. Pressure cook your meat for a further 5 minutes and then do a quick release on the remaining pressure. 

Is it Possible to Overcook Meat in an Instant Pot?

This is because pork loin is a lean cut that can dry out when cooked over medium-well.
